English borrowed "coleslaw" from Dutch "koolsla," first mentioned in English by 1794, itself a combination of Dutch kool ("cabbage") and sla ("salad").

The Dutch compound koolsla simply meant "cabbage salad," and English kept both the meaning and the mash-up form intact when it borrowed the word.

The "kool" half traces back through Old Dutch and Middle Dutch to Latin "caulis" and ultimately Proto-Indo-European "*keh₂ulis," the same deep root behind other cabbage-related words.
