From Middle English coilen, from Old French coillir/cuillir ("to gather, pluck, pick, cull"), from Latin colligō ("to gather together"), from com- ("together") + legō ("to gather").

The word began as a verb meaning to gather or pick things up, and over time settled into describing the looped, gathered shape that gathering produces.

It's a doublet of cull — both descend from the same Latin colligō, one keeping the sense of selecting, the other the sense of gathering into loops.
