English "rice" comes from Middle English rys, from Old French ris, from Old Italian riso, tracing back to Byzantine Greek óruza. Beyond that, the trail splits: one path leads through an Eastern Iranian language possibly from Sanskrit vrīhi, itself perhaps borrowed from a Dravidian or Austroasiatic source; another has óruza coming from Hebrew órez, from South Arabian, ultimately from Old Tamil arici.

The word seems to have moved steadily westward along trade routes, passing from language to language as the grain itself spread, until it settled into French and then English with its modern form and meaning largely intact.

It's a doublet of "arroz," the Spanish and Portuguese word for the same grain, both descending from the same Byzantine Greek word.
